Joined February-March Lunch Challenge

Today I decided to join Krystal at work's February-March Lunch Challenge! As she describes it, the challange is "...to not spend any money on lunch/snacks/coffee/tea during work days from now until March 31st". This will be tough for me, but definately doable! Wish me luck!

Today I brought Oatmeal and fruit cocktail for breakfast.

A granola bar for morning snack

A salad and Meatloaf Muffin for lunch

Carrots for afternoon snack.

I didn't mealplan this week, so I'm going to get one together today for this week and next week.

    Good for you! I just stocked up on the Soup on Hand cup thingies for DH's lunch. Can you please share the specific of meatloaf muffins? DH isn't exactly a sandwich guy and I've done the bagel/cream cheese thing. I also saw PBJ muffins for the kids. I'm definitely in need of lunch options! Thanks in advance!

    Mom Sense,
    The meatloaf muffins are easy. I either use a normal meatloaf recipe & just divide the loaf by 12 & bake in a muffin tin.

    OR is use this modified recipe:

    Meatloaf Muffins:
    1 to 1.25 pounds lean ground beef or ground turkey
    2 egg whites
    1 cup water
    1 box Stovetop Stuffing
    Diced Onion as much as you like

    Mix together and divide into 12 muffin cups that have been sprayed with non-stick cooking spray. Bake at 350 degrees for 35-40 minutes.

    To bulk them up, I've been known to put in some extra veggies- green pepper, carrots, ect. These are easy to make and freeze VERY well!

    Thanks, House! Definitely will get these on the menu - and if they freeze well, sounds like a great option for those nights when we're not all together and small ones need to eat! Will report back! Thanks!

    This is something I could definately benefit from! I am going to sign up also. I spend way too much on coffee and lunch at work. I will be a true test of willpower but I think I am up to it.
