Baking and Cold Weather

I baked 2 dozen Blueberry Banana muffins last night. Yummy. Ate a few & froze the rest.

Tonight I made 3 dozen chocolate chip cookies. Most of which, I'll be taking into work tomorrow.

Its cold in my house right now. 49 degrees outside, 63 inside. Not too bad with the heat off. But I'm chilly. The stove kept the kitchen warm for awhile, but now I'm freezing again. I'm layering up and am cozying up on the couch with a blanket. My goal is to keep the heat off as absolutely long as possible. I get cold fairly easy, so I have to work hard to stay warm Smile

And since my entertainment budget is blown with a work lunch out today, I am making plans for the weekend. Watching my nephew for a few hours tomorrow night. Doing some computer work at my parents on Saturday. Saturday night will be movie night in. Sunday will be a cleaning day.

I have to pick up cat litter and some veggies after work tomorrow, but after that, except for going to my parents (who live 10 minutes away), I really don't have a need to leave the house. No heat, no gas, no spending Smile

    I'd love your recipe for the muffins.

    Even though it's not all that cool here yet, I've been dreaming of baking. I'm thinking pumpkin pie and cookies. I think Juliette and I are going to make applesauce tomorrow.

    That is what I love about the fall! Baking and cozing up on the couch!
    DH and I started weight watchers a couple of weeks ago. We are both losing weight, but psychologically, I am always STARVING!! Any suggestions?

    Weight Watchers is awesome! I know that feeling of deprivation. It does go away after a while. I would suggest eating high fiber foods and protein. Also, I usually get a little activity in each day, which lets me eat a little more because of the activity points.

    Dairy is filling, meats, eggs, cheese all help. Also, I tend to fill up on veggies as part of mini-meals throughout the day. HUGE salads, carrot sticks, greenbeans, ect. Its amazing how much veggies you can eat for nearly no points!

    Reginaastralis, here's the recipe. I tweaked the original recipe by adding milk to it.

    2 cups whole wheat flour
    2 tsp baking soda
    2 tsp baking powder
    1/2 c brown sugar (I used Splenda's version)
    1/4 c milk (I used fat-free)
    4 egg whites
    1 to 1 1/2 cup bananas, mashed
    1c to 1 1/2c blueberries
    1 tsp vanilla
    1 tsp cinnimon

    Mix flour, baking soda, baking powder, cinnimon and brown sugar in a large bowl.

    Mix banana (mashed), egg whites, vanilla and milk together.

    Mix banana mixture into flour mixture. Then fold in blueberries.

    Put mixture into greased muffin pan. Bake at 350 degrees for 18-20 minutes. I found that I needed a few more minutes after that because of the milk. But check it at 18-20 mins first.
