I am planning another Lunch Challenge for myself. I am looking to make healthy meals to bring to work instead of buying food while there. This is to help me with my Weight Watchers as well as with my eating out budget.
So there are 20 work days in the month of February. My goal is to pack breakfast, lunch & snacks for 18 of them. My stretch goal would be to pack for 20 & that might be doable since my work is providing me pizza one day & my manager is taking us out to lunch on her dime another day.
Anyone else who'd like to join, just let me know what your goal is! This is for fun
And to get a jump start, I packed all my food for tomorrow, even though its still a January date.
Anyone want to join me for a February Lunch Challenge?

What most helps is that I make several days worth of lunches at a pop. I recommend it if you aren't too scared of leftovers , have access to a work refeer, no lunch thieves, and a microwave. I take a small square Ziploc storage box, layer it with cooked brown rice about 1/2 to 2/3 c, add about 4-6 oz of a protein - x-tra firm tofu, ham, chicken/turkey breast, leftover meat entree. Then I add a tablespoon of a condiment - chutney, pickle, or dip. Check out the ethnic aisle in your grocery store for ideas. I just finished eating all my turnip pickles (2 qts!) doing this very thing.

Basalle - I do pack a day or two at a time usually, but I will definitely have to check out the ethnic aisle!
And I really like Pjmama's idea - share what we brought! Anyone who'd like to do that, please share!
